Isn’t everything good on toast! The secret with these little bites is all in the gouda.. don’t scrimp on the gouda, get a really really good one! A favorite of ours is Reypenaer, there are different ages of the chess and all are delicious. If you happen to find yourself in Amsterdam there is a Reypenaer store near Dam Square that does a great cheese tasting of all the different flavors, you can also find this cheese online or on amazon every now and then too. So essentially this is like a fancy grilled cheese on toast.. the apple and honey compliments the cheese so much and the rosemary brings everything back down to earth.
- Your favorite baguette or ciabatta
- Gouda, sliced
- Crisp green or honey crisp apples
- Honey
- Rosemary
- Salt and pepper
- Olive Oil
Chop the apple into small dice and put into a bowl with honey, salt and pepper, mix together. Add finely chopped rosemary to your taste. Toast both sides of your crostini under the grill with a little olive oil, then place your sliced gouda on one side and place under the broiler again until the cheese melts (don’t go too high or else you will burn the toast! If your broiler only has a high shelf then don’t toast one side and place the cheese on the untested side). Once melted and yummy, place the apple mixture ontop and finish with a tad of finishing salt and a ground more pepper.
