An easy and delicious winner every time! Our friend Linda stopped by with a bounty of tomatos from her garden, then another friend Angie stopped by to bring us some fresh basil from her garden.. it was a mid week dinner orchestrated by friends!
- Sourdough, Ciabatta or French Bread
- Olive oil
- Tomatos
- Fresh basil – chopped
- Garlic – I use mine just to rub the toast with to give a little garlic flavor
- Red or White Onion (most people use garlic but it can sometimes take over a bit for me so I prefer onions mine)
- Balsamic vinegar or glaze
- Salt and Pepper
Chop the tomatos and onion, put in a bowl with chopped basil and drizzle in the olive oil. Season with salt and pepper.
Toast your bread both sides, rub one side with fresh garlic just to give a hint of garlic flavor, spoon the bruschetta over the tops and drizzle with your favorite balsamic vinegar or glaze ( I used a fig balsamic that you can find in the pantry ). Top with a little extra fresh basil and away you go!
