After the inspiration we drew from our trip to Israel, the fresh flavors and addition of some new spices found their way into the kitchen as a mainstay. A couple of BBQ favorites below with some fresh Israel inspired sides!

Jerusalem Spiced Chicken Kebabs
Jerusalem Spiced Chicken Kebabs

These kebabs are super easy and super flavorful. Ingredients as follows:

  • 4 Chicken breasts cut into cubes
  • 2 cloves garlic crushed or diced
  • 1 or 2 cartons of greek yoghurt (2 small ones will do the job)
  • Zest and juice of a whole lemon
  • About a tablespoon of Jerusalem spices
  • Roughly 2 tablespoons chopped mint
  • Salt and pepper
  • Olive Oil
  • Green and red bell peppers
  • Onions
  • Wooden or metal skewers (if using wood, don’t forget to soak them in water first)

Cut the chicken breasts into cubes and add the garlic, greek yoghurt, zest and juice of a lemon, Jerusalem spices, chopped mint, salt, pepper and olive oil into a bowl and mix it throughout to get a good coating on the chicken. Place the chicken in a zip lock or leave in the bowl and refrigerate for at least a couple of hours.

Assemble the skewers by alternating the chicken, the onions and peppers.

Throw them on the BBQ et voila!

I serve mine with a range of sides. Below seen with beef skewers, mustard and dill potatoes and arugula salad, any kind of salad will work great, especially with a zesty lemon vinaigrette. A friend sent us a bottle of Tabor Cabernet Sauvignon from the Upper Galilee region which paired beautifully with the kebabs. and of course, don’t forget the pita, olive oil and zaatar!
