When carrots are good, they are really good! I look for small sweet carrots in the store that have incredible flavor when you roast them in the oil. The carrots steal the show when they are perfectly in season and not over done. Simply roasting int he oven with a touch of extra virgin olive oil, salt and pepper… roasted until al dente, doesn’t get better than that!
