Who doesn’t love breaded chicken breast, it’s basically fresh chicken nuggets! I love serving this dish with a homemade slaw which you can make in so many different ways, my favorite is with peanut dressing which is included in the recipe below.
- Chicken breast sliced and flattened
- Egg
- Flour
- Panko breadcrumbs
- Salt and Pepper
- Olive oil
Pre heat oven to 400 degrees.
First get your chicken stations all set up and ready to go. 1) put some flour onto a dinner plate season with salt and pepper 2) Beat an egg into a bowl and season with salt and pepper 3) place Panko breadcrumbs onto a dinner plate and yeah, season with salt and pepper!
Flatten the chicken and season with salt and pepper. dip the chicken into the flour first, shake off excess, then into the egg, shake off excess and then into the Panko and coat on all sides. Place onto a plate or tray until ready to cook.
Once you’ve coated all your pieces, heat some olive oil in a cast iron skillet or non stick pan and brown the chicken on both sides, it doesn’t need to be cooked all the way through as you’ll take it out of the skillet and place onto a baking sheet once browned, then place into the oven for 10-15 minutes until the chicken is cooked. place not kitchen paper to remove any excess oil then chop into little bites of yum!
For the slaw:
- Any bag of slaw mix, or get a couple of different cabbages (red and green) and slice really thin to make your own
- Scallions
- Bell peppers
- Cilantro
- 2 tbsp peanut butter
- 2 tbsp light soy sauce
- 2 tbsp rice wine vinegar
- 1 tsp honey or agave
- 1/2 tsp sesame oil
Mix the slaw, sliced scallions, cilantro, and bell peppers into a salad bowl. Make the dressing by combining peanut butter, soy, vinegar, honey and sesame oil together, if its a little thick, you can add a touch of water and whisk the whole thing together! It should be pretty thick so it sticks to the slaw, I use an extra splash of vinegar as I like the extra zing.
