Our friend Julie gifted us a voucher to a sustainable fish supplier here in the Bay Area, TwoXSea, they supply many of the restaurants locally and do home delivery. I cooked the Petrale sole last night.. it was probably one of the best pieces of fish I have ever cooked. It was so fresh, so tasty and melted in your mouth. I always want to respect ingredients I cook with, this fish doesn’t need much other than cooking it just right, some olive oil, lemon and capers. Literally that’s it! We have some halibut and salmon in the freezer from TwoXSea, I can hardly wait to try it!
